Glutinous Rice (Bora Rice)

Glutinous rice, locally known as Bora Rice, is a traditional sticky rice variety of Assam valued for its soft, chewy texture and cultural significance in local cuisine and festivals.

Bora Rice is a unique indigenous rice variety with high amylopectin content, which gives it a sticky texture after cooking. Despite its name, it is naturally gluten free. Glutinous rice is an essential ingredient in Assamese traditional foods such as pitha, jolpan, sunga saul, chira, and ladoos, especially during festivals and rituals. The cultivation of Bora rice preserves Assam’s agrobiodiversity and supports rural livelihoods. With rising demand for ethnic, traditional, and specialty foods, glutinous rice offers strong scope for MSME led processing, ready to cook products, ethnic food branding, and niche domestic and international markets.
